Heidi's Chili + Cornbread Recipes

Here, by popular request, is Heidi's delicious chili recipe!!!  It's fall in a bowl and really simple to make! Let us know if you try it out and what you think of it!!


CHILI

INGREDIENTS:

2 lb ground beef or 3-4 lb stewing meat, like bones less chuck roast, cubed 

1 onion 

2 - 28oz petite diced tomatoes or crushed, or a combination. 

1 rounded t. Cumin

2 t. Salt

1/4 c. Chili powder

1 can chili beans

1 can Pinto or black (or your fav bean)

1/2 t. Paprika

1/2 - 3/4 c. Brown sugar

DIRECTIONS:

Brown beef and onions (drain if using ground beef). Add rest of the ingredients, and simmer for 1/2 hr to 1 hour, or in crockpot all day. The cubed beef changed the flavor from a traditional chili to a more hearty savory chili. If I want a spicier chili I add a few punches of Cayenne Pepper. If I use more sugar if I'm using ground beef, less if cubed beef. 

Top with your fav items:

Jalapeños - Fritos - Cheese - Green onions

cornBREAD

makes 12-15 squares

INDREDIENTS:

2/3 c. butter (soft)

1 c. sugar

3 eggs

1 2/3 c. milk

2 1/3 c. flour

1 c. corn meal

4 1/2 t. baking powder

1 t. salt

DIRECTIONS:

In a large mixing bowl, cream butter and sugar. 

Combine eggs and milk in a smaller bowl.

Combine flour, cornmeal, baking powder, and salt; add to creamed mixture alternately with egg mixture.

Pour into greased 9x13 pan.

Bake at 400 degrees for 22-27 min. (or until toothpick inserted comes out clean).

Serve warm!
